Raspberry-Chocolate Cheesecake

I usually do not make dessert, but I love cheesecake. I found this recipe and thought it looked easy enough. It was so good! I got it out of a Family Circle magazine and then found it on-line HERE. Enjoy!! (Sorry I forgot to take a picture-next time.)

Makes: 12 servings Chill: 4 hours
Prep: 15 minutes
Bake: at 325 degrees F for 10 minutes; at 350 degrees F for 40 minutes

Ingredients
Crust:
2 cups soft macaroon cookie crumbs
3 Tbs. unsalted butter, melted
Filling:
1 package (8 ounces) cream cheese, softened
1 egg
1/3 cup sugar
1-1/2 Tbs. lemon juice
1/4 cup milk chocolate chips
Topping:
3 Tbs. seedless raspberry jam
1 Tbs. milk chocolate chips

Directions
1. Heat oven to 325 degrees F.
2. Crust: Combine cookie crumbs and butter. Press into the bottom and 1 inch up the sides of a 9-inch springform pan. Wrap foil around bottom of pan. Bake at 325 degrees F for 10 minutes. Coolon a wire rack. Increase oven temperature to 350 degrees F.
3. Filling: In a medium-size bowl, beat cream cheese, egg, sugar and lemon juice until smooth.
4. Sprinkle 1/4 cup of the chocolate chips over the bottom of the cooled crust and spread the cheese mixture evenly over the chips.
5.Topping: Heat raspberry jam gently, until just liquid enough to drizzle over the top. Sprinkle remaining 1 tablespoon of chips over the top. Bake at 350 degrees F for 35 to 40 minutes or until filling is set.
6. Remove cheesecake to wire rack and cool completely. Refrigerate for 3 to 4 hours until completely chilled. To serve, remove from refrigerator, let stand 15 minutes, then remove side of pan.

Zucchini Bread- thief!

I found a Zucchini Bread Recipe that we all enjoy. My friend gave me some zucchini at church yesterday, so I made some bread today. While it was cooling.... I noticed that my son was chewing on something... he kept leaving the room and coming back.... so I went to see what he was doing! His little hand was reaching up and he was enjoying some bread!!


Here it the recipe:

INGREDIENTS
3 eggs
1 cup vegetable oil
2 cups white sugar
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnuts

DIRECTIONS:
1. Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans.
2. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans.
3. Bake for 60 to 70 minutes, or until done.


I just use a bread baking stone and do not have to grease or flour the pan. I also leave out the walnuts, but you can add them if you like.

Great Recipe

Last night I tried THIS new recipe. It was SOOOOO Good! I did change the ingredients a little.

Italian Fettuccine Pie

Prep Time:30 min
Start to Finish:1 hr 10 min
Makes:6 servings

1/2 lb lean (at least 80%) ground beef  (I used 1 lb)
1 small onion, finely chopped (1/4 cup) ( no onion for me- allergic)
1 can (8 oz) stewed tomatoes, undrained
1 can (8 oz) tomato sauce (2 cans of this)
1/2 teaspoon Italian seasoning
6 oz uncooked fettuccine
2 eggs
1 tablespoon butter or margarine, melted
1 cup shredded mozzarella cheese (4 oz) ( I used more in the noodles and I put some on top.)
1 cup small-curd cottage cheese
1 cup Green Giant® frozen chopped broccoli, thawed, or chopped fresh broccoli (Next time I make it I will leave off the broccoli- it was ok, but did not really go in my opinion.)
1/4 cup grated Parmesan cheese ( I used more on top.)

1. Heat oven to 350°F. In 10-inch skillet, cook beef and onion over medium heat, stirring occasionally, until beef is brown; drain. Stir in tomatoes, tomato sauce and Italian seasoning. Heat to boiling, stirring occasionally. Reduce heat. Cover; simmer 10 minutes, stirring occasionally.

2. Meanwhile, cook and drain fettuccine as directed on package.

3. In medium bowl, beat one of the eggs and the butter. Stir in fettuccine and mozzarella cheese. In ungreased 9-inch quiche dish or pie plate, spoon and press mixture evenly in bottom and up side of dish.

4. In small bowl, mix cottage cheese and remaining egg; spread over fettuccine mixture in dish. Sprinkle with broccoli. Spoon beef mixture evenly over top. Sprinkle with Parmesan cheese.

5. Bake uncovered about 30 minutes or until hot in center. Let stand 10 minutes before cutting.
